supply, operate meat and smallgoods processing machines, and manage the processes in the product-ion of smallgoods
ANZSCO 3512 屠夫和肉类加工者技能要求 Indicative 技术等级 Skill Level
• 本单元的大多数职位需要具有与下述资质和经验相当的技术层次。 Most occupations in this unit group have a level of skill commensurate with the qualifications and experience outlined below
• 在澳洲:AQF证书3级,包括至少2年的在职培训或AQF证书IV级(ANZSCO技术3 级)In Australia: AQF Certificate III including at least two years of on- the-job training, or AQF Certificate IV (ANZSCO Skill Level 3)
• 在新西兰:NNZ资格证4级(ANZSCO技术3级)In New Zealand: NZ Register Level 4 qualification (ANZSCO Skill Level 3)
• 至少3年的工作经验可以代替上述的资格证。At least three years of relevant experience may substitute for the formal qualifications listed above

• 备肉标准:剔骨、去肥肉并进行切割、剁碎和研磨。 preparing meat for sale by removing bones, trimming fat and cutting, mincing and grinding me-at to shape and size for display or as ordered
• 准备碎肉,对其进行卤汁、风干和腌制。preparing crumbed cuts of meat, and marinating, seasoning and curing special cuts
• 选肉和备肉。selecting and preparing meat to produce smallgoods
• 使用机器进行如下处理:研磨、混合、切碎和变嫩。operating machines to grind, mix, mince and tenderise meat
• 使用混合香料、盐和其它作料来制作调料和咸菜。making seasonings and pickles by mixing spices, salt and other ingredients
• 操作香肠充填机、薰房、炒锅和蒸煮锅。operating sausage filling machines, smoking chambers, and cooking kettles and vats
• 对肉片的使用提出建议。advising customers on the suitability and uses of cuts of meat
• 可能要协助制定菜单和时间表,并估计生产成本。may assist in menu planning and scheduling, and in estimating food production costs
